Preheat oven to 400°
1/2 Cup butter, softened
1/2 cup sugar
2 large eggs
1/4 tsp vanilla
1 1/2 cup flour
2 tsp baking powder
1/2 cup milk
1/3 pound (1 cup) Aronia berries
1/2 cup pecans or walnuts (optional)
Cream butter with sugar, add eggs one by one, mixing thoroughly after each addition. Add vanilla. Mix flour and baking powder, then add to the egg mixture together with the milk, stirring just as much as needed to combine the ingredients. Fold in the berries and nuts. Divide into 12 prepared muffin tins. Bake 15 – 20 minutes at 400°. (I usually find it makes 14 – 16 muffins.) If you are filling adventurous, Aronia berries make a great, healthy wine.
